摘 要:该文聚焦白酒酿造副产物黄水的处理技术与资源化利用问题展开综述。黄水因成分复杂,未经有效处理排放会污染环境且浪费资源。文章梳理了直接排放、简单回收利用等传统处理方式的局限,详细阐述了微生物、化学、物理等新兴处理技术的研究现状;同时探索了黄水在制备酒类相关产品、生产生物肥料、提取高价值成分等资源化利用途径。黄水的处理面临处理成本高、技术稳定性差、产业化推广困难等挑战。未来应加强技术创新,开展多技术联合应用研究,加快产业化推广,并针对酿酒废水处理共性问题寻找解决方案,以推动酿酒产业可持续发展,实现经济、环境与社会效益的统一。

Research Progress and Prospects on the Treatment of Huangshui Fluid,a Byproduct of Baijiu Brewing

Abstract:This article focuses on the treatment technologies and resource utilization of huangshui fluid, a byproduct of baijiu brewing,and provides a review of the topic. Huangshui fluid,due to its complex composition,can pollute the environment and waste resources if discharged without effective treatment. The article reviews the limitations of traditional treatment methods such as direct discharge,simple recycling,and elaborates on the current research status of emerging treatment technologies including microbial,chemical,and physical methods;at the same time,resource utilization pathways for huangshui fluid are explored such as the preparation of alcohol related products,the production of bio-fertilizers,and the extraction of high-value components. The treatment of huangshui fluid faces challenges such as high treatment costs,poor technical stability,and difficulties in industrialization promotion. In the future,it is necessary to strengthen technological innovation,conduct research on the joint application of multiple technologies,accelerate industrialization promotion,and find solutions to common problems in the treatment of brewing wastewater,in order to promote the sustainable development of the brewing industry and achieve the unity of economic,environmental,and social benefits.
